I'm always looking for easy dinner recipe ideas. I purchased a box of Pillsbury pie crusts and planned to bake individual pot pies.

But then my kids asked for broccoli cheese soup. So I thought, what if I combined both? The answer isChicken pot pie soup!

  • Chicken– You need chicken that is already cooked. I’ll share some chicken meal prep ideas later in this post!
  • Vegetables– Onions and celery make up two thirds of a traditional mirepoix and provide a nice flavor base for our soup. Then I add chopped broccoli florets, but you can use another vegetable if you want!
  • chicken soup– For the best taste, use a high-quality broth here. Homemade chicken stock is always my first choice, but for convenience I often rely on cartons of stock!
  • whipped cream– This gives the soup the richness of a chicken pot pie filling.
  • Crushed red pepper flakes– Use more or less depending on your family’s preferences.
  • Cheddar cheese– If you have time, grate your own cheese. It will melt much more smoothly! But if you don't have time, don't worry - your chicken pot pie soup will still be delicious.
  • Pie crust– I used Pillsbury, but if you’re ambitious enough to make homemade pie crust, then give it a try!

How to Make Chicken Pot Pie Soup

Make the soup:

  • In a large pot, melt the butter over medium-high heat.
  • Add onions, celery, and broccoli and cook until vegetables are soft, about 3-5 minutes.
  • Dust the vegetables with flour and cook for another minute, stirring constantly.
  • Slowly stir in the broth, milk and cream, followed by the red pepper flakes, salt and pepper.
  • Add the cooked chicken and continue cooking over medium heat until warmed through, about 10 to 15 minutes.

Make the Crust Strips:

  • Roll out the thawed pie crust.
  • Cut the dough into strips and place on a baking tray lined with baking paper.
  • Bake in 450 degree oven for 6-8 minutes or until lightly browned. Remove from oven.

How to Prepare Chicken for Recipes

Even as a food blogger, I don't have the time to make dinner from scratch every night. Instead, I often use a batch of chicken to make multiple recipes throughout the week (like this Chicken Pot Pie Soup!).

Here are some ideas on how to do it:

  • BAKE.To make life easier, I bake a few extra plain chicken breasts every time I cook chicken for dinner. I put them in a zip-top freezer bag and put them in the freezer to save for a quick dinner.
  • COOKING OR GRILLING.If you don't have cooked chicken on hand, you can bake, grill, or boil some chicken breasts.
  • ROTISSERIE.One of my favorite easiest things to do is buy a rotisserie chicken for quick dinner prep! Our grocery store even sells them pre-shredded for a reasonable price.
  • SLOW COOKER.Another option would be to add a few pounds of chicken breasts to the slow cooker with a cup of chicken broth. Cook on low for 6 hours. When ready, shred the chicken and use it in recipes immediately or divide it into zip-top freezer bags for future meals. This is something I do on the weekends when we are just relaxing at home.

What type of chicken should I use for this recipe?

You can use cooked chicken breasts or chicken thighs – whichever you prefer! I like to use chicken thighs in soups because they are a little more forgiving and also more flavorful.

What can I replace the pie crust spoons with?

If you don't have time to make the pie crust strips, you can use oyster crackers or saltines. Or, if you just don't have pie crust on hand, try making flour tortilla strips or puff pastry. Croutons would also be delicious – or just serve your soup with a piece of crusty bread on the side!

What can I use instead of flour to thicken soup?

You can use a cornstarch slurry instead of flour, or even puree some white beans or chickpeas and stir them into the broth.

What to Serve with Pot Pie Soup

Gradually add broth, milk, cream, red pepper flakes, salt and pepper. Mix with a whisk and then add the cooked chicken. Heat over medium heat until warm, about 10-15 minutes.
  • To make crust strips, roll out the thawed pie crust (for one crust). Cut into strips and place on a baking tray lined with baking paper. Bake in 450 degree oven until browned, 6-8 minutes. Remove from oven.
  • To assemble, pour the soup into individual ramekins and top with grated cheese and pieces of pie crust strips. ENJOY!
  • Leftover turkey after Thanksgiving and Christmas is a great idea. Home cooking is always a good option.
  • Stay vegetarian. Omit the meat and add more vegetables. Swap in some potatoes, peas, carrots and mushrooms!
  • Take away the cream and replace it with non-fat milk. You may want to add an additional tablespoon of flour to make the soup thicker.
  • Another way to save calories is to remove the cheese and pie crust spoons. I know. These pie crust spoons are one of the best parts. But if you don't do them, you won't miss them.
  • If you prefer, use homemade pie crust.
